I have to share this recipe with you. I grew up on a farm in Washington State, and growing up used to go running through and around the wheat/corn fields and have such great memories of how amazing it smells and looks. My first date with my husband was running through fields in Rexburg, Idaho and so he decided to propose to me on my home farm in WA while we were on a run. It was absolutely perfect. I looked awful but that made it all the better. He loves me for me, running clothes, sweat and all. So this recipe my sweet momma made the night we got engaged. It has sentimental value, but I have gotten so many compliments on it, I had to share.
It is only four ingredients and comes together SO quickly. It has the consistency of something like soft serve ice cream, but a little bit thicker. And has just the right amount of lemon to make it delightful 🙂 Here goes:
- Premade Vanilla Wafter Crust {or Graham Cracker}
- 1/2 Cup Lemon Juice
- 8 oz Cool Whip {room temperature}
- 1 {14 oz} can sweetened condensed milk
- Combine room temperature cool whip, sweetened condensed milk, and lemon juice. Mix well in a large bowl, until no lumps are visible. Pour into crust and freeze overnight or 6-8 hours. Serve Frozen and garnish with lemon slices. enjoy!
- Note: I usually buy a store bought crust. Here is the recipe for a homemade one: Combine 1 1/2 Cups finely chopped {I used my food processor} vanilla wafer crumbs {or graham crackers} and 6 TBSP Butter. Press firmly into a 9 inch pie plate and chill.

I know, right? Run to the grocery store, stir it up and throw it in the freezer and you are good! Plus, seriously crazy good, I hope you enjoy it! Oh my goodness, yes, sometimes after making dinner, I want a quick and easy dessert that I don't have to spend the rest of my night in the kitchen!
