Peppermint Bark

Have I mentioned before that I LOVE Christmas? I know it’s horrible that I use it as an excuse to eat whatever candies I want but… I do. So there.

I made these delicious treats the other day and really like them. They were easy to make and would be great for giving away to neighbors, especially paired with some of the caramels I shared with you the other day. 

I used almond bark instead of white chocolate chips because it melts better and sets up better (I think). Plus you can melt it in the oven, which makes clean up a little easier (no scrubbing pans). 

I used a whole package of almond bark to make a 7 x 11 pan of this peppermint bark, but if I did it again, I would probably only use 3/4 of the package. It is just a little thicker than I would like it to be. peppermintbark4

One of the steps of making this treat involves crushing candy canes with a meat tenderizer. Needless to say, my two year old boy thought that was the. best. thing. ever.

So basically, you melt the almond bark, crush the candy canes, and mix them all together. Easy enough, right? Let me know if you try it. I’m sure you’ll love it!

Ingredients
  1. one package almond bark
  2. 12 candy canes (12 oz peppermint candy)
  3. tin foil
Instructions
  1. Line a 7x11 inch pan with tin foil.
  2. Preheat oven to 175
  3. Place 3/4 - all of the almond bark in the pan.
  4. Bake for 15 minutes. Stir and smooth out into pan.
  5. Bake longer if necessary to get all of the bark melted.
  6. Crush candy canes in a zip loc bag.
  7. Mix candy canes into melted chocolate.
  8. Let cool.
Notes
  1. Almond bark can also be melted in the microwave, but more dishes would need to be used, which means more cleanup!
