Recipe #15: Fancy Ramen Noodles

Ramen noodles are a staple at our house. We eat them a LOT. They are cheap and really good. But, they get old. So, we have a little trick at our house for making them fancier. Here’s what you need:

Ramen Noodles (2 packs)
frozen peas (about 1/2 cup)
leftover meat of some kind (we used pork and salmon)
eggs
So, cook your noodles, but don’t put the seasoning in. While they are boiling, fry up your meat in a frying pan. Add your peas in after the meat is browned a little bit. Crack about 4 eggs in a bowl and mix them so all the yokes are broken and mixed together well. When the noodles are done cooking, drain the water out. Put the noodles in your frying pan and pour the eggs in. Open the seasoning packets and sprinkle them over the mixture. Cook until the eggs are fully cooked. 
That’s it. My husband likes to eat it with soy sauce. It’s yummy. If we don’t have left over meat or frozen peas on hand, I just put eggs in. It adds a little bit extra to the noodles.

Recipe #14 Avocado Breakfast Smoothie

Are you ready to have your mind blown? I learned how to make a smoothie that is super smooth, but dairy free. No yogurt or milk of any kind. The secret? Add an avocado. If someone else already knew this, you are now dead to me for the next.. 30 seconds.
Okay, now that that’s done with, I will share with you the recipe for this fantastic smoothie. Not only is it smooth and yummy, it’s good for you, too!
 You need spinach, an avocado, a lime, and a mango/pineapple/strawberry frozen fruit mix.

So first, I put in about 2 handfuls of spinach with water. I blended that up because it seems like the easiest way to get the spinach blended well. Then, I put in a whole pitted and skinned avocado. I followed that with a few handfuls of a mango/strawberry great value frozen fruit mix. Then, I juiced about 1/4 – 1/2 of a lime over it. That’s it. Amazing. My kids even loved it.

Recipe #13: Jello Cake

I sort of made this up on accident. I was trying to make one thing and I thought it failed.. horribly. BUT! It turned out that what I actually made was really yummy. It didn’t look super pretty until I put whipped cream on top… then who cares what it looks like, right? As long as there is a cream topping, everything is going to be okay. No, but seriously, try it. It’s easy and yummy.

You need a yellow cake mix and the ingredients listed there, and a box of raspberry jello and cool whip.

Make the cake mix according to directions and bake it.

Poke holes in it with a fork. Allow the cake to cool.

Boil 1 cup of water. Add jello mix and 1 cup cold water to the boiling water. Stir until it’s mixed completely.

Pour jello mixture over cake. Cover it and put it in the fridge for four hours. Top with cool whip, or whipped cream, like I did.

Recipe #12: Grandma’s 3 ingredient mac & cheese

My husband’s grandma is a wonderful cook. She loves to cook for people, and she is pretty darn good at it. She is always coming up with some kind of fabulous food. I have learned a lot from watching her at work. This is one of my favorite recipes of hers. It is easy and delicious and can be made with as little as three ingredients. Those ingredients are:

elbow macaroni
milk
cheese
When she makes this, she uses cheddar. I ran out of cheddar, so I used some Swiss too, and it was amazing. She also puts tomatoes and polish dogs on the top, but I didn’t have either of those, so I didn’t put those on. But, if you want to, they make it even better. 
Here’s how the recipe goes:
Turn oven on to 350
Cook macaroni according to instructions. I made an 8X8 dish of this, so I used 2 cups of noodles. I would use 4 or even 5 if you are doing a full size pan. 
Cut cheese into thin slices. You are going to need to cover the whole pan twice, so cut enough for that. You can grate it if it’s easier. If you are using more than one cheese, it’s probably better to grate it (although I didn’t, and it was fine)
When the noodles are done cooking, spray your pan and spread a thin layer of noodles on the bottom. No more than 2 or 3 noodles deep. Then spread your cheese out over the whole dish. Then, lay down the rest of the noodles. If you are putting on tomato slices or polish dogs (make sure they’re already cooked), now is the time for that. Then, add another layer of cheese. 
Pour milk over the top of your dish. I did about 1/3 cup for my 8X8 dish, but I probably should have done closer to 1/2. Just pour it as evenly as you can over the whole dish. 
Put your pan in the oven for 20 minutes. 

Pull it out and let it cool for a little bit. Enjoy!

Recipe #11: World War II Browning Pudding Cake

This recipe seriously took like 10 minutes to make. And, it’s magic. You’ll see why later. And, I had all the ingredients on hand (and I bet you do to.) Because it uses no eggs or butter and very little sugar, it was a popular dessert during World War II. I found it in Better Homes & Gardens New Cookbook. That cook book is my number one go-to cookbook. If you don’t have it… you should buy it. It’s only $10 on Amazon or something like that. I really think that I would survive without any other cook book as long as I have that one.

Back to cooking. The things you need for this recipe are:

1 cup flour

3/4 cup granulated sugar
2 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons cooking oil
1 teaspoon vanilla
1/2 cup walnuts (I omitted these)
3/4 cup packed brown sugar
1/4 cup unsweetened cocoa powder
1 1/2 cup boiling water
First, get out an 8x8x2 inch pan. Grease it. (I’m not sure why all cooking recipes have you do this first.. but they do… so you better do it!)
Turn on your oven to 350 
Mix your flour, sugar, 2 tablespoons of cocoa powder, baking powder, and salt in a bowl. Then, pour in your milk, oil, walnuts and vanilla. 
This batter should be pretty thick (and delicious). Pour it into your prepared pan. 
Boil the water. While it’s warming up, mix your brown sugar and cocoa powder together in a small bowl. Pour them into the boiling water and stir. Pour this liquid over the cake.

Put it in the oven for 40 minutes. When you pull it out, you will see why it’s magic. There is cake on the top, and pudding on the bottom! Magic! When you’re done staring at your food in awe, place the pan on a wire rack and let it cool for 30-45 minutes. Serve warm over vanilla ice cream for an amazing dessert.
